Made Cebiche (or ceviche or seviche) …sort of…
We didn’t have fish but we had PLENTY of leftover pork. So I cut the pork into half-inch cubes. Threw in that giant corn which I can’t think of what the name is… Thinly sliced red onion, chopped parsley, salt and pepper, and lots of fresh-squeezed lime and orange juice. It was delicious and soooo good with fresh-baked, moist sweet potato. (I wrapped Japanese sweet potatoes two-by-two in foil and baked in a 350-oven for about an hour and a half.)
I can not wait to try this with raw fish! I loooove raw fish!!!
